Ingredients
  

  • 350 g Crispy Pork Belly other meat like pork minced, Shrimps or Chicken
  • 10 chilies red bird's eye chili
  • 3 chilies green bird's eye chilies
  • 4 cloves garlic
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sugar
  • 2 tbsp cooking oil
  • 100 ml water
  • 3-4 chilies red and green bird's eye chili, seedless and slice for garnish
  • 1-2 handful holy basil

Instructions
 

  • Pound red and green bird's eye and garlic until mostly fine and set aside.
  • Add cooking oil to a pan over medium heat.
  • After the oil is heated, add the pounded curry paste from step 1 and stir until fragrant.
  • Add crispy pork that has already been cut and season with fish sauce, sugar, light soy sauce, oyster sauce, and water, then stir together and taste it.
  • Turn on the gas to high heat, and add chopped green and red chili, and holy basil. Stir and mix for about 2 minutes. Turn off the heat and transfer to a serving plate.

Notes

  • If you want Stir-Fried Crispy Pork Belly and basil to have more color, add dark soy sauce 1 tsp.
  • Serve with hot steamed rice and topped with a fried egg. Yummy!
